Created by our Head Brewer Casey as part of our Brew Series, this Kölsch is a study in restraint, patience, and precision. Brewed true to style with traditional German ingredients and Isaria barley — the oldest malting variety in Germany — it’s a beer that lets history speak softly. Ten weeks in tank and eight weeks cold-conditioned have shaped something clean, refined, and quietly expressive.
Subtle malt, gentle fruit, and a crisp, elegant finish come together without ever raising their voice. It’s the spirit of Cologne, found in Cheltenham — brewed with intention, and meant to be savoured.
